Castle MacLellan’s executive chef has trawled Scotland, renowned for its abundance of natural produce, in search of the finest ingredients.

This has resulted in partnerships with local suppliers including Galloway Lodge Preserves, Rannoch Smokery, Orkney Crab, John Mellis Honey and Graham’s Dairies. Over time these suppliers have become our friends and firmly part of the Castle MacLellan family.

Rannoch Smokery ^

The Rannoch Smokery is famous for outstanding smoked meats. Richard, who took over the company from his father Leo, is passionate about producing the best smoked meats from the hills surrounding Kinloch Rannoch in Scotland. Situated at the heart of the Scottish Highlands in the shadow of Schiehallion, Rannoch Smokery offers its customers a true flavour of Scotland. We have been sourcing smoked meats from Rannoch since 1982.

Orkney Crab ^

We source all of our crab from the Orkney Fishermen’s Society. The Orkney Fishermen’s Society has been established since 1953 and this group of men continue to source but also to sustain crab and lobster species in the Orkney isles. Our fishermen have been catching Orkney Crabs and Lobster since 1953 fishing them out of the freezing cold waters surrounding the Orkney achipelagos. These delicious Scottish Crabs give us the tastiest base for our Luxury Orkney Crab Terrine.

Galloway Lodge v

Galloway Lodge have been making the apple jelly we use in our Rannoch Smoked Duck pate for 40 years. It all started in Fiona’s kitchen, just seven miles up the road from us. Our Executive chef, Laurence Magee, wouldn’t allow sugar to be added to our pate and instead insisted only the finest apple jelly be used to balance the sweetness of our products. Today our apple jelly is still handmade up at Galloway Lodge keeping Fiona and her family very busy.

John Mellis Honey v

John Mellis and his partner Joan have been making honey just around the corner from us for years. Every summer John moves his 400 bee colonies up to the beautiful heather moors in South West Scotland. It’s here that these bees get busy making Heather honey, which gives us our distinctly smokey honey that is perfect for our Chicken pates.
