Chicken Liver Pâté with heather honey

 

Venison Medallions with chicken and heather honey pâté, Madeira and mushroom sauce

Pan fry venison medallions for 3 minutes either side. Place a scoop of the Chicken & Heather Honey Pâté and place on top of the medallions. Serve with madeira and mushroom sauce (recipe below)

To make sauce use 1 pot of Castle MacLellan Mushroom pâté and dilute with beef stock and Madeira.

Chicken Pâté Palmiers

Buy palmiers from any supermarket and sandwich with chicken liver and heather honey pâté

Garlic and Chicken Ciabatta

To toast the ciabatta brush with garlic butter and spread with chicken liver and heather honey pâté.
Sprinkle with parmesan and place under the grill.

Smoked Duck Blinis

Spread pâté on blinis and decorate with coriander

Smoked Duck Spring Rolls

Layer three rectangles of filo pastry, brushed with melted butter. Place pâté along the centre, fold pastry end in and roll. Brush with butter and bake.

Mini Duck En Croutes With Beetroot Chutney

Cut two discs of puff pastry approx 40mm. Spoon pâté into the centre of one of the discs and add a teaspoon of beetroot chutney. Brush edges of pastry with wash, place the other pastry disc on top and seal. Brush with egg wash and make a small hole in the top and bake in a moderate oven.

Crab Risotto

Make your favourite risotto and fold in a tub of the terrine and sprinkle with mozzarella.


Crab Soufflé

Fold two beaten egg whites into a pack of terrine. Pour into a buttered ramekin and bake for 20 minutes.


Crab Pasta Bake

Mix terrine with cream and cooked pasta. Place in a casserole dish. For the topping mix a 250g tub of créme fraiche with 100g of mature cheddar, season and spread over the top of the pasta. Bake in a moderate oven for approx three minutes.

Oven Roasted Mushroom Pâté with garlic & thyme

Stuffed chicken Breast

Cut a pocket into the top of a chicken breast with a sharp knife. Place half a tub of pâté in the pocket, wrap in Parma ham, sprinkle with mozzarella and bake.

Quick Mushroom Sauce

Dilute the pâté with single cream, chicken, beef or vegetable stock. Simmer. Add brandy or white wine to create sauce to pour over steak

Flat Cap Mushroom Bake

Spread pâté on a flat cap mushroom, sprinkle with breadcrumbs and cheese and bake.

Smoked Salmon Parcels

Take a helping of salmon pâté and spoon onto a strip of smoked salmon. Roll this up and serve with chilled asparagus tips.

Baked Brioche Rolls with Smoked Samon Pâté

Cut the top of the brioche roll, scoop out the centre. Fill with pâté and bake in a moderate oven for 20 minutes

Smoked Salmon and Haddock Chowder

Combine pâté with fish stock and cream. Add diced cooked potatoes and small cubes of undyed smoked haddock. Simmer until the haddock is cooked and sprinkle with chopped chives or parsley.
